Can credit card companies "force" a person into bankrupcy? If I just choose not to pay them, what is the most that they can do to
me? Thanks.

Creditors can petition someone into bankruptcy but it rarely happens.
Usually they will sue you through the Courts and obtain a Judgment
against you. That Judgment can be used to seize your wages or assets. It
will also remain on your credit record for at least 10 years which will
affect your ability to obtain other credit.
