If I declare bancrupcy, how does this affect my
spouse and any credit rating they might have? Can I file without them
filing? Would declaring have any effect on the type of job I can have
(ie. in financial institutes, etc)?

In Canada, if you file for bankruptcy your spouse's credit rating should
not be affected. Your spouse would still be liable for any debts that he
or she has, including any debts that were originally held jointly. You
can file without them having to file as well. Generally, bankruptcy does
not affect your employment and your Trustee can confirm that once they
know what your occupation is.
